Gypsum is found during a Dig near the western border of Egypt (within 1000 coords of the edge, so west of -2100). As the cuttable stones get depleted, the cuttable stones are gradually replaced by gypsum. Gypsum will show after around 60-70 cuttable stones and will gradually get more common (100% gypsum after ~350 cuttable stones).
Note from Yendor: The trend is correct but the numbers are wrong (or it is based on time not stones dug). I aborted my first attempt at 125 cutables with 0 gypsum. My second attempt gave 460 cuttable before they stopped appearing.
